I harvested the whole batch of mushrooms by twisting them from the base, chopped them up with garlic and onions, and ate them with my wife (made two servings of about 3oz) as a side dish to Potato Kugel. They tasted amazing!
I don't recommend eating them raw, as I was researching their many health benefits (good source of: Iron, Niacin, Vitamin D, Fiber, and the potent antioxidant "Andergothioneine") and discovered that there is a mild toxin (ostreolysin) that needs 140 degree heat to break down.

Not knowing the best procedure to do before waiting for a second flush, I placed a bag over the box, cut a half dozen dime-sized holes in it, and misted the inner bag. I've heard that second flushes of mushrooms can often exceed the bounty of the first. Here's hoping!
