My favorite local grocery store became innoculated with mushroom culture about 3 weeks ago, by supplying grow kits. It appears the grocery store chain is now pinning with a new, vested offering and interest in "exotic mushrooms".
Maitake is also called "Chicken/Crab of the Woods" because many believe that they taste like their namesake.
The fact that the store chose the Japanese names "Enoki" and "Maitake", instead of the mushrooms' common English names, may indicate their desire to market them to the nearby, culturally-diverse SUNY Binghamton students.
It also serves as a double-edged sword to strike the interests of the masses by seeming more exotic.
