Polish and pronounced [Co-pit-ka], Kopytka is delicious.
My wife and I finally decided to sample the dining establishment called Eva's European Sweets.
The food was AMAZING. I particularly liked their Kopytka.
They are potato dumplings reminiscent of Gnocci, but baked/fried and served in a bacon sauce!
I found a recipe online and tweaked it.

Fry the dumplings in some veggie oil, or bake them until golden brown, and use fresh mushrooms.
Also, add 3 tablespoons corn starch (mixed into 1 cup of hot water) to the sauce to make it nice and dense.
Garnish with scallion slices or green onion. When in doubt, add bacon to your saaaaaauce.
